Now that’s a title that will catch your eye! And yes, one of our favorite sandwiches is a Pot Roast sandwich on french bread that we pick up at a local Gas Station (that has a bakery and deli). My husband will occasionally grab them for lunch – to brighten my day.
(Yes – good, tasty food DOES brighten my day)
Once I found some recipes for Instant Pot French Dip Sandwiches, I could almost taste them….
I used a very simple variation:
4 cups beef broth
2-3 lbs. Chuck Roast
1 pkg onion soup mix
1 pkg au jus seasoning
1/2 sweet onion, sliced
Optional: Cheese – I used Havarti which melted beautifully
I browned the chuck roast using the Saute method in the Instant Pot. I then removed the roast, and sauteed the onions. Pour the beef broth in the Instant Pot and de-glaze all the wonderful bits on the bottom. Place the roast back into the Instant Pot and sprinkle the onion soup mix and au jus seasoning over the roast. Place the lid on the Instant Pot and cook on HIGH Manual Pressure for 90 minutes. Allow for a 30 minute NPR. I opened the pot and ‘lightly’ shredded the meat (just separated from the large piece – you still want chunks – not fine shreds). Then I let the meat sit in all the wonderful juices while I prepared the rolls. I buttered some Italian/French bread and sprinkled with garlic powder. Broil or toast these rolls and they’ll be ready for piling on the beef. I like cheese on my sandwich so I placed a slice of Havarti on the roll, then the beef. The outcome: amazing!!
