Giving the Famous Instant Pot Cheesecake #17 recipe a try

Disclaimer – I think cheesecake is one of the most subjective foods – you love it or hate it…and if you love cheesecake…you love YOUR recipe/method/flavor.

After reading so many blogs & Facebook posts about the famous Cheesecake #17 recipe   – I just had to try it.  I do believe I followed all the instructions/ingredients properly.  I opted for the mini cheesecakes and followed the 12 minute High Pressure followed by a NR (Natural Release).  I let them cool and placed them in the refrigerator.  Did you think I was going to wait until a proper lunch or dinner dessert – absolutely not!!

I started the morning by cutting up some luscious strawberries and sprinkled them with sugar to make a great topping. I dove into one of the minis for breakfast today.  The consistency was good – crust was very good – the taste was a little different than I am used to.  I again reviewed the recipe and noted that it was called New York cheesecake, which is much drier and different than my husband’s awesome recipe.  I’m not blaming a recipe – it just wasn’t to my liking.

Note to self – Try to use my husband’s recipe when I get back home – but adapt to the Instant Pot.  I think I may have a new winner if I can get those ingredients to meld with the Instant Pot technology.
